6 large drumsticks
1/2 cup soy sauce
3 TBS brown sugar
1/4 tsp garlic powder
3 TBS vinegar
1 tsp ginger
1 cup water
1 chicken boullion cube
Pull skin off the drumsticks. Boil water and add boullion. (In microwave is easiest.) Mix all the ingredients. Marinade chicken. Bake in covered casserole dish for 45 minutes at 350*F or until chicken is tender and falling off the bone. Serve with rice and use sauce over rice.

Whole wheat Pumpkin Muffins
While I am stuck on pumpkin this morning...
2 cups sugar
1/2 cup vegetable oil
3 eggs
1 1/2 cup pumpkin
1/2 cup water
3 cups whole wheat flour (get out your wheat grinders)
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cloves
3/4 tsp. cinnamon
1 tsp. nutmeg
(opional chocolate chips or crasions/raisons and nuts)
Mix ingredients well. Bake at 400*F for 15-20 minutes or until tops are done.
My kids all like these with chocolate chips. I also use pumpkin pie spice instead of the cloves and nutmeg. Vaughn doesn't think they are sweet enough. They certainly don't taste like the mixes you buy at the store, but I think they are super yummy!

A funny story about these cookies. Lochsley brought them to a class party in high school and told everyone they were pumpkin cookies. The class was like "yuck" and no one would try them. Then one of Lochsley's friends tried one and started going on about how great they were. Then everyone had one and they loved them. These cookies are famous at her old high school now and a favorite with her friends.

This is the Richard's favorite pumpkin pie recipe and it is mostly based on Libby's Famous Pumpkin Pie Recipe. This is for you Nicole...

1 29 oz. can of pumpkin (straight pumpkin, not pumpkin pie mix)
1 1/2 cups sugar
1 tsp salt
2 tsp. cinnamon
1 1/2 tsp pumpkin pie spice
2 12 oz. cans of evaporated milk
2 9 in. deep dish,homemade,unbaked pie shells with high fluted edge
Preheat oven to 425*F. Combine ingredients in order given, pour into pie shells. Bake 15 minutes. Reduce heat to 350*F. Bake an additional 45 minutes on until knife insterted in center comes out clean. (To keep you pie crusts from burning, use a tin foil halo. Note, if you aren't using homemade, deep dish pie crusts but using regular frozen 9" pie crusts, this recipe will make 4 pies.

Easy Spagetti Chicken (no pasta involved)
My family calls this Spagetti chicken even though there is no pasta involved. When Isaac was in and out of the hospital the YW brought over a pan of this to put in the freezer and have for dinner later. It is VERY EASY to make, and turns out tender and delicious. Lochsley called me for the recipe yesterday and reminded me of this recipe, so I think we'll have this sometime this week.
Boneless, skinless chicken breasts (How ever many you need for your family)
A can or jar of spagetti sauce (hence the name the kids gave it)
Mozzarella cheese
Place chicken in a baking pan. It doesn't matter if it is frozen or not. Dump the spagetti sauce on top. Cover with tin foil and bake at 350*F. Sprinkle on the mozzarella cheese the last 10-15 minutes of the cook time and cover and finish baking. Frozen chicken could take up to an hour. Unfrozen chicken about 35 minutes. Check chicken to make sure it is cooked all the way through before serving.
Serve with French bread, salad or green veggie and fruit for a yummy and healthy and VERY EASY meal.

The VERY BEST Potato Rolls on Earth!
1 1/2 cups hot water (I just use tap water as hot as it comes out of my sink.)
1 heaping TBS of quick rise yeast (or one package quick rise yeast)
1/3 cup white sugar
1/2 cup powdered milk
1/4 cup potato flakes (plain with no butter seasoning)
1/4 cup melted butter
1 tsp. salt
2 eggs beaten
4 1/2 cups unbleached flour
Wisk all the ingredients together in a bowl except the flour. Stir in the flour. When you can't stir with a spoon anymore knead the dough. If the dough is too sticky, add flour to your kneading a handful at a time. Knead the dough until it isn't sticky but don't knead too much (so says Mom, rolls are not bread which needs a lot of kneading). Cover and let rise. I do this in a warm oven. I heat my oven to 150*F then turn it off. I put the metal bowl in and let rise about 30 minutes or until double. Take out and punch down dough. Knead a little. Roll out to about a little more than your little finger thickness. For my rolls I have 1/4 cup butter melted in my roll pan. I use a cup to cut out circles of dough which a swipe in the melted butter in the bottom of my pan and fold in half. Next time I make them I'll take a picture. Let the rolls rise in the pan for a few minutes.
Bake for 17 minutes at 375*F or until just a little golden brown.
This recipe can be used to make cinnamon rolls and scones too.

3/4 cup white sugar
1 tsp. vanilla
2 eggs
2 3/4 cups unbleached flour
1 tsp salt
1 tsp baking soda
2-3 TBS cocoa
1/2 bag white chocolate chips
1/2 bag dark chocolate chips
Preheat oven to 375*F Cream butter, sugars and vanilla. Beat in eggs. Mix in flour that has the salt, baking soda & cocoa sifted in. Mix in chips. Bake for exactly 11 minutes at 375*F.
If you have a Bosch mixer and have cookie wisks, you can do this whole recipe without changing out the paddles. For Bosch or Kitchen Aides switch from wisks to a dough hook when you mix in the flour. For you poor college students...use elbow grease and a really strong spoon to mix in flour or be a little kid and do it by hand.

Why I've created this blog!
This blog is mostly for Lochsley, who is constantly calling me wanting recipes to cook and bake at college. I am linking it to our family blogs so anyone in the family who needs a quick, easy and delicious recipe can have access to my favorite recipes. These recipes come from family, friends and favorite cookbooks. They are all kitchen tested and family approved. Most of them are pretty easy. Some are very fast so that if you are tired and haven't started dinner yet, there is a chance for a home cooked meal. Too much McDonalds is ICKY, ICKY, BAD FOR YOU! I will try to add a recipe or 2 each day (that I think about it). Feel free to suggest recipes to add to this. Some of my best recipes have come from family!
